Hazelnut Cookies with Milk Chocolate

Toasted hazelnut cookies with milk chocolate-lifestyle blog from Luxembourg
Let's face it, December is the month when the holiday baking fever begins, right? Maybe the festivities approaching or simply colder temperatures make me want to turn on my oven and bake some goodies. Besides, it makes a great additional gift for friends (only if you don't eat what you bake all by yourself before it's time to give presents:)) And it can happen sometimes... Today I am sharing delicious toasted hazelnut cookies recipe. They melt easily in your mouth, but at the same time they are crunchy, because of the shortbread cookie dough. I always go for a simple recipe with a tasty outcome. So ladies, put your aprons on, heat the oven and start mixing ingredients to have these slice n' bake cookies!

TOASTED HAZELNUT COOKIES WITH MILK CHOCOLATE from Sally's baking addiction

3/4 cup (170g) unsalted butter, softened to room temperature
2/3 cup (133g) brown sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
2 cups (250g) all purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup (120g) toasted and finely chopped hazelnuts
150g milk chocolate ( or if you prefer dark chocolate, or white, it's your decision)

- In a large bowl using a mixer, beat the butter until completely smooth and creamy. Add the brown sugar and beat on high speed until fluffy and creamy. Beat in egg and vanilla extract on high speed. Scrape down the sides and bottom of the bowl as needed, and continue to beat until fully combined.

- In a separate bowl, whisk the flour, cinnamon, and salt together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be thick and slightly sticky. Beat in 3/4 cup chopped hazelnuts. Turn the dough out onto a floured work surface and, with floured hands, divide in two. Shape each half into the desired size and tightly wrap them in plastic wrap and chill in the refrigerator for at least 4 hours or overnight.

- Slice logs into equally thick cookies and place them on baking sheets. Bake in a preheated oven to 180°C for around 10-14 minutes or until brown around edges. Allow to cool for few minutes on a cookie sheet, then transfer to the cooling rack to cool completely.

- Melt the chopped milk chocolate. Dip each completely cooled cookie halfway into the chocolate and place onto parchment or cooling rack. Sprinkle with remaining chopped hazelnuts. Let the chocolate to set.

Sausainiai su lazdyno riešutais ir pienišku šokoladu
SAUSAINIAI SU LAZDYNO RIEŠUTAIS IR PIENIŠKU ŠOKOLADU iš Sally's baking addiction

3/4 puodeliai (170g) nesūdyto sviesto kambario temperatūros
2/3 puodeliai (133g) rudojo cukraus

Tortilla Soup

I often have some difficulty to start my food related posts. I always want to write: what could be better than.... When I sat down to write about today's soup, I immediately thought: oh what could be better than a bowl of hot and comforting soup when it's cold outside?.. Very creative :)) On the other hand, a bowl of soup is really something that you want to reach to get warmer. And this tortilla soup is not only very comforting, but also spicy, so you get warm very easily :)). If you don't like spicy, so simply skip chilli powder part or put less! Besides, if you are not a big fan of cumin in general, maybe this soup isn't for you, because the taste of cumin in this soup is very strong. Myself, I am not the biggest fan of cumin, but I decided to give it a try anyway and I loved this soup and weirdly, the strong taste of cumin was something I was suprised in a very good way. So don't judge the soup until you try, and you should try! :))

Man dažnai būna sunku sugalvoti įžanginį sakinį rašant įrašą apie receptą, kuriuo noriu pasidalinti. ;)

Carrot Cake with Cream Cheese Icing

the best carrot cake
It's this time of the year when a piece of cake with a cup of coffee or tea feels so comforting and it's what you need to make a gloomy day slightly better. There is nothing better than a cozy afternoon or evening at home, all curled up on a sofa with a blanket in front of your favorite TV series or a book in your hands. Well for this moment a piece of cake is a total must, right? During cold season I can call myself homebody, and if it wasn't for my dog, sometimes I even wouldn't step outside from my home for all day.. But let's come back to today's topic - cakes. Whenever I go somewhere to grab a coffee and see a carrot cake aside, I need to order it. It's my new addiction. So for this reason I decided to find a carrot cake recipe that looks good enough for me and to bake it at home. And holy moly guys, I have to say that it is THE cake. Moist, fluffy, full of taste, fulfilling and the icing takes it even to a higher level. I am very happy how this cake turned out, like so good! After eating one piece you will reach for another, trust me! Did I convince you?? :))

Tad pagalvojau, kodėl gi nepabandžius išsikepti to tobulo skanėsto pačiai. Paieškojusi, radau sau patinkantį receptą ir štai šiandien matote rezultatą - morkų pyragą iš didžiosios raidės. Koks skanumėlis!!! Drėgnas, tiek kiek ir reikia, purus, sodrus skonis, ir toks sotus, kad suvalgius gero gabalėlio, daugiau nebesinorės nieko, išskyrus gal antro gabalėlio :)) Įtikinau? :))

Lemon Tartelette

Delicious Lemon Tartelette
EN   About a month ago, I baked these cute little lemon tartelettes for my boyfriend's birthday. The initial plan was to bake a big cake, but then I somehow changed my mind and decided to go for few smaller cakes. I thought it would look very sweet and it did. "Something lemon'y" was a wish from my boyfriend and so I started my research what I could prepare and I remembered I ate very delicious lemon tartelette when I was back in Lithuania, so I instantly decided it had to be this. So I searched for a recipe and found the one I am sharing today. It turned out very well. There is something so cute about these little portions, or is it just me?? :)) Anyways, very lemon'y, very delicious, lovely and good looking tarts.

Little note: the prepared pastry before baking might look too oily, I was worried about that too, but it turned out perfectly crispy and tasty, so there is nothing to worry about that. Another thing, I used different size small tart tins, though the initial recipe is supposed to prepare 36 muffin size tartelettes. I made 5 various size tarts and I had some pastry leftover.

O tuomet jau skanaus!! :))

Lemon Yogurt Cake

Lemon Yogurt cake-Simply Magnifique blog
EN   What do you do when it's raining and it's windy as hell on Sunday? I bake the cake! And you see the result in this post. I love anything lemon related, so no wonder why I chose this lemon yogurt cake. Easy to make, 90% that you will have most of the ingredients already at home, so why not to whisk everything together and enjoy a little piece of heaven. Yes, this cake is literally a piece of pure heaven. Do you remember me baking lemon bars (recipe HERE)? They were delicious, but this cake is even better. It has a different texture: very light, moist and so fluffy. It turned out so well, especially the fluffiness and the moist which I always seek in my cakes, but not all the times I succeed.

I highly recommend you to try this cake and follow the recipe! Don't try to skip the baking soda. You might think that baking powder is enough. No, add the required amount of baking powder and baking soda as recipe says. It matters!!! If you bake it, let me know what you think about this cake!!!! Happy and fun baking!!

LEMON YOGURT CAKE  adapted from David Lebovitz

DRY INGREDIENTS

1 1/2 cup (210g) all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda (don't skip this ingredient!)
1/2 teaspoon salt

WET INGREDIENTS

1 1/2 cup (300g) sugar
1 cup (250g) whole milk yogurt (I used 0% greek yogurt)
1/2 cup (125ml) neutral tasting vegetable oil (I used sunflower oil)
2 large eggs, at room temperature
2 tablespoons freshly squeezed lemon juice
zest of 2 lemons

LEMON GLAZE

1 1/2 cup (210g) powdered sugar
3 tablespoons freshly squeezed lemon juice

- Preheat the oven to 180°C (350°F). Butter or oil the 23 cm cake pan and dust it with flour or you can use the baking paper. (I used a round 23 cm cake pan without baking paper, only buttered and floured).

- Mix together flour, baking powder and salt.

- In a large bowl whisk together the 1 1/2 cup sugar, yogurt with baking soda, oil, eggs, lemon juice and lemon zest until smooth.

- Mix about one third of the dry ingredients into the yogurt mixture, then stir the rest, in two batches, just until the dry ingredients are completely incorporated. Do not overmix. Scrape the batter into the prepared pan and bake for 40 minutes (my cake was perfectly done in this time), or until a toothpick inserted into the center of the cake comes out clean and not sticky.

- Let the cake cool for about 15 minutes, then take it from the cake pan and let the cake cool down completely on a wire rack.

GLAZING. Mix the powdered sugar and lemon juices until smooth. Pour it in the center of the top of the cake. Spread it gently with a spoon or spatula and let the glaze drip down the side. After the glaze firms, you can sprinkle powdered sugar on top to make the cake even more beautiful!

1 puodelis (250g) naturalaus jogurto (aš naudojau 0% graikišką jogurtą)
1/2 puodelio (125 ml) neutralaus skonio aliejaus (aš naudojau saulėgrąžų aliejų)
2 dideli kiaušiniai, kambario temperatūros
2 šaukštai šviežiai spaustų citrinos sulčių
2 citrinų žievelės

CITRININIS GLAISTAS

1 1/2 (210g) cukraus pudros

GLAISTAS. Sumaišykite cukraus pudrą ir citrinos sultis iki vientisos masės. Mišinį pilkite ant pyrago centro ir gražiai šaukštu ar mentele paskleiskite glaistą ant pyrago leidžiant glaistui varvėti pyrago šonais. Glaistui sustingus, kad pyragas būtų dar gražesnis, galite jį apibarstyti cukraus pudrą.

Mini salmon, pea and mint tartines

Salmon tartines
EN   Today I have a pea party on the blog. Kind of :) I've been wanting to make these mini salmon, pea and mint tartines since early December, but only last week I managed to do that. Preparation doesn't require any efforts and the taste is very nice. The mint takes these tartines to a higher and more sophisticated level, unless you don't like mint, so I guess it won't be anything sophisticated for you :)) but you can totally cut it out, if you prefer! I will be preparing these mini tartines again soon for one of our soirée with friends. I wanted to check the recipe before serving it, you know just in case :))

Salmon, pea and mint tartines
MINI SALMON, PEA AND MINT TARTINES (serves 10) from magazine Olive

  • multigrain bread or rye bread (as you prefer), slightly toasted
  • 200 g frozen peas, defrosted in a bowl of hot water, but not cooked
  • 75 g half-fat crème fraiche
  • 1 tbsp mint sauce
  • 1 tbsp lemon juice
  • 100g smoked salmon, snipped into strips
  • 1 punnet salad cress
  • pinch of salt
  • freshly ground black pepper

Slice each toasted slice of bread into 4 fingers, then cut in half to make 32 in total. Arrange over boards or platters for serving. Or you can use multigrain ciabatta (like I did) cut in small pieces, depending how many people will be served.

Drain the peas well, then tip into a bowl with the crème fraiche, mint sauce, lemon juice, plenty of freshly ground black pepper and a pinch of salt. Use a potato masher or fork, or blender to mash everything to a rough crush. Taste it and season more (salt, pepper or lemon juice) if needed.

To serve, spread a little of the crushed pea over each bread, top with a ruffle of salmon and snip over the cress.

Remarks: 200g of frozen peas make a great quantity. If you are planning to serve it for 2 people (like I did) I highly recommend you to divide this in half, because it's just way too much. I prepared a full portion of this mash and we had leftovers for a second day. Plus, if you can't find mint sauce, no worries, you can simply substitute it with fresh mint (blended).

Mini salmon, pea and mint tartine

Chocolate Cookies with Maltesers

Chocolate cookies
EN   As I promised few posts ago, here it is a new sweet treat recipe for Christmas in case you wanted to gift a little bag of homemade cookies for your relatives or friends. Very delicious and really chocolate'y cookies. A bit crispy on the outside and soft and chewy on the inside, plus they have a very appealing look, don't they? These cookies satisfy all my sweet cravings and has a perfect texture that makes you eat them one after another.

There are not many ingredients in this recipe, which is good, but one ingredient particularly gave me some headache. It's Horlicks powder. I couldn't find this particular Horlicks thing here in Belgium, so I had to google how I could substitute it.. Horlicks is a malted milk drink, so what I could find the closest thing to it in the shop was Nestle milk powder, so I went for it and the recipe turned out perfect. I hope you will be able to find malted milk drink wherever you live easier than I did!

I love this cookies, they are amazing, and I will definitely repeat them, because they are just too good. Also you can watch a video how to make these cookies on Jamie's you tube channel HERE. Really easy!

Tai žinomas pieno gėrimas Anglijoje, tačiau kur aš gyvenu, Belgijoje, tokio niekaip neradau, tad teko gerai pagooglinti, kuo čia man pakeisti. Artimiausia alternatyva, kurią pavyko rasti parduotuvėje, buvo Nestle pieno milteliai. Receptas pavyko puikiai, tad manau šie pieno milteliai pasiteisino. Tačiau tikiuosi, kad jums bus lengviau rasti alternatyvą ar tą patį Horlicks gėrimą nei man!

Dar kartą pasikartosiu, kad man labai skanūs šie sausainiai, na tikrai puikūs ir tikrai kepsiu dar, nes per daug skanūs :) Beto, jei norite pažiūrėti video, kaip gaminti šiuos sausainius, jį galite rasti Jamie you tube kanale ČIA. Labai lengva!

Soft and chewy chocolate cookies

CHOCOLATE COOKIES with Maltesers from Jamie's Comfort Food
  • 50 g unsalted butter
  • 200 g quality dark chocolate (70%)
  • 1 x 396 g tin of condensed milk (sweetened)
  • 25 g ground almonds
  • 2 heaped teaspoons Horlicks
  • 200 g self raising flour
  • 100 g Maltesers
  • 50 g quality white chocolate
  • pinch of sea salt

Melt the butter and dark chocolate in a pan on a low heat until smooth and combined, stirring occasionally. Add a pinch of sea salt. Remove from the heat and stir in the condensed milk, followed by the almonds and Horlicks. Sift in the flour and mix together, then chill in the fridge for 20 to 30 minutes (no longer). Once cool, but still pliable, smash up the Maltesers and roughly chop the white chocolate, then mix it all together with the dough.

Preheat the oven to 170°C. Divide the mixture into 24 equal-sized balls and place on a couple of large baking trays lined with greaseproof paper. Flatten each a little - like a squashed golf balls and then bake for around 12 minutes. Leave to sit in the tray for 5 minutes, then transfer to wire rack to cool.

If you want to decorate like I did, then drizzle the cookies with dark and white melted chocolate while they cool.

christmas baking - Soft and chewy chocolate cookies

Kalbant apie dovanėles, maistinės dovanos man atrodo tiesiog nuostabios.

Butter cookies with salted caramel
BUTTER COOKIES WITH CARAMEL FILLING  from a magazine Virtuvė 2014
  • 250 g flour
  • 1/2 teaspoon baking powder
  • 125 g butter
  • 1 egg
  • 60 g sugar
  • 1/2 orange zest
  • pinch of cinnamon
  • salted caramel for filling

Sieve the flour. Mix the flour and baking powder. Cut butter in small cubes, place it in a bowl with flour, add egg, pour sugar, cinnamon and orange zest. Knead the dough with hands till it's smooth and elastic. Wrap in a plastic film and put it in the refrigerator for 30 minutes.

On a floured working station, roll out to about 5 mm thick sheet of dough. Cut round cookies with a round cookie cutter. Preheat oven to 200 °C. Place the cookies on a baking paper and bake in a hot oven for about 5-8 minutes. Be attentive, because these cookies tend to get brown very fast. Remove from the oven and let it to cool.

Spread a tablespoon of salted caramel on one side of one cookie and then sandwich it with another cookie and apply a little bit of pressure. Let it cool completely and store the cookies in a sealed container.

HOMEMADE SALTED CARAMEL  from L'atelier des chefs
  • 80 g butter
  • 100 ml full cream
  • 180 g sugar
  • 2 pinch of sea salt

Cut the cold butter into small pieces. Pour the sugar into the medium pan over medium heat, stirring constantly with a wooden spoon. Sugar will begin to caramelize, continue to stir till you get homogeneous caramel. Then add the butter and stir well until it's completely melted. Be careful, because the caramel will bubble rapidly when you add the butter. Then pour the cream while stirring. Once the cream is incorporated, remove form the heat and season with sea salt. Let it cool down before using. You can store the caramel for up to 2 weeks in the fridge. (You can watch a video how to make a caramel HERE).

How about you, my dear readers?? Are you already in your Christmas mood??? Are you ready to heat the oven and bake some goodies??? :))

homemade salted caramel
SVIESTINIAI SAUSAINIAI SU KARAMELĖS PERTEPIMU  iš žurnalo Virtuvė 2014
  • 250 g miltų
  • 1/2 šaukštelio kepimo miltelių
  • 125 g sviesto
  • 1 kiaušinis
  • 60 g cukraus
  • 1/2 apelsino smulkiai tarkuota žievelė
  • žiupsnelis cinamono
  • sūdytos karamelės sausainiams pertepti

Persijokite miltus.

Ideas For Weekday Dinner

EN   It's not a secret that I like to cook and I like to eat. And I like to hit the gym. You know, just for the sake of balance :) I would love to share here more of my dishes I make at home, but with the daylight so short I never manage to make it on time. And as you may noticed, I like my food photos done nicely, in an aesthetically appealing way. So it's really difficult to do that when it gets dark so fast, when you work and plus sometimes you don't want to eat a cold food after all, because taking photos takes more than five minutes. But today's post is not about how I would like to write more food related posts. Today I wanted to share few ideas for your weekday dinner. Some days we have more time to prepare something delicious, other days we lack of time or/and inspiration. So I thought it would be nice to share the recipes I made and repeated through time in order to inspire you to take time and dinner well even during the week!
P.S. if you want to see the recipe, just click on the dish name and it will take you to the post where you will find the recipe. Hope you will enjoy this food journey!

LT   Čia ne jokia paslaptis, kad aš mėgstu gaminti, o dar labiau valgyti. Dar ką labai mėgstu, tai  po to sportuoti. Na, žinot, viskas balanso palaikymo saikui :)) Man labai norėtųsi dažniau su jumis pasidalinti mano gamintais patiekalais, tačiau ta trumpa dienos šviesa dažnai pakiša pagalius į ratus.
P.S. norėdami perskaityti receptą, paspauskite ant patiekalo pavadinimo ir jus nukels į to įrašo puslapį. Geros maistinės kelionės!

Let's start with a soup. You can't survive cold winter without a proper WINTER SOUP. It's so warming, so fulfilling and deliciously good. And easy!

If you want to have pasta for the dinner, then it would be a great idea to prepare a good batch of MARINARA SAUCE in advance, freeze it if you're not planning to use it directly or the next day. The time you choose to make pasta, you would just need to choose the perfect shape of pasta and preheat the sauce. Couldn't be easier, right? Like homemade fast food that has only good things in it.

In case you wanted something more interesting to eat and really enjoy the dinner together with someone or even alone in front of the Sex and the city movie (again :))), then I suggest you to go for CHICKEN FAJITAS with salsa and guacamole. De-li-cious and fun to eat.

Again another Mexican cuisine dish: caramelized onion, spinach and avocado QUESADILLAS. So good and very easy to vary the filling. If you don't like spinach, then go for paprika, you can add chicken, let your imagination run free and hopefully your stomach will thank you for it ;))

CHICKEN & SPINACH CANNELLONI would be a great choice for a Friday's dinner accompanied by the bottle of wine. I've already made three or four times this one and it's always a winner.

BEEF STIR FRY a dish full of vegetables and soft beef. Delicious and you don't need to spend hours in the kitchen to prepare this healthy dish.

I hope this post will give you some ideas for spicing up your weekday dinner's game. I would love to know if you tried any of these recipes or when you do, let me know!!!! Have a nice week!!

Marbled Coffee Cake

Marbled coffee cake
EN  Last week I was craving for a piece of something sweet, so I decided to bake a cake. As usual I wanted to try something new, but at the same time something that is made easily, and the marbled coffee cake seemed to be the right choice. But oh my goodness, this is a serious guilty pleasure, because you need to use the whole package of butter. For me it's a lot, but I followed the recipe anyway and the cake turned out very delicious, smooth and moist. Little piece with a coffee during the day, little piece with a tea in the evening and it disappeared easily from the plate.

Marmurinis kavos pyragas
MARBLED COFFEE CAKE  from Mary Berry's Complete Cookbook

250 g soft butter
250 g caster sugar
4 eggs
250 g self raising flour (I used regular one and it turned out well)
2 tsp baking powder
2 tsp instant coffee
1 tbsp hot water

ICING ( I made half portion of the icing, but I give you the exact amounts that were written in the original recipe):

60 g butter, softened
3 tbsp milk
2 tbsp instant coffee
250 g icing sugar

- Grease the baking form with butter. In original recipe it was suggested to use the ring mould. As I don't have it, so I used my silicone baking form. Different shape doesn't change the taste ;)

- Combine the butter, sugar, eggs, flour, and baking powder in a large bowl. Beat until smooth.

- Put half of the mixture into another bowl. Dissolve the instant coffee in the measured hot water and stir into one half of the cake mixture.

- Drop tablespoonfuls of the plain mixture into the baking form, then tablespoonfuls of the coffee mixture on top of the plain mixture. Marble by swirling together with a skewer (I did it simply with a fork).

- Bake in preheated oven at 180° C for 40 minutes or until well risen and firm to the touch. Leave to cool for a few minutes, then turn out on to wire rack set over a tray, and cool completely.

- ICING: combine the butter, milk, and coffee in a pan and heat, stirring, until smooth. Remove from the heat and beat in the icing sugar until smooth and glossy.

- Leave to cool a bit and then pour over the cake, to cover the top (if you use half amount of ingredients for the icing) or cover completely the sides too (if you use full portion of the icing).

Lemon Bars

Lemon bars
EN   I can never say no to a good lemon cake and I'm always in search of that perfect soft lemony texture. And I think I might have found it. I've already made few lemon cakes, but only this recipe is worth sharing on the blog, because it has everything what you expect from bars. They are soft, sweet, you can feel lemon very well and to top it off, very easy to make and of course way too easy to eat, because they are cut in cute small squares. Trust me, your hand will be reaching like: oh one more, okay one more again and then that's it....oooookay maybe the last one and voilà, you will see the tray is empty :)

LT   Aš niekuomet negaliu atsisakyti gabalėlio gero citrininio pyrago, todėl esu pastovioje to minkštučio citrininio gabalėlio paieškoje.

Lemon bars
LEMON BARS  from the Mel's kitchen cafe

Lemon batter
142 g all purpose flour
155 g sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon lemon zest
8 tablespoons butter, melted and cooled
2 large eggs
1 large egg yolk
3 tablespoons fresh lemon juice
1 teaspoon vanilla extract

Lemon glaze
75 g powdered sugar
1 tablespoon fresh lemon juice
1/2 teaspoon lemon zest

Preparation
- Preheat oven to 180 degrees C. Line an 20x20 cm baking pan with a baking paper so that it hangs over two of the edges (to lift out bars later).

- In a large bowl, whisk together the flour, sugar, salt, baking powder and lemon zest.

- In a separate bowl, whisk together the butter, eggs, egg yolk, lemon juice and vanilla extract.

- Stir the wet ingredients into the flour mixture and mix until combined.

- Spread the batter evenly in the prepared pan.

- Bake for 18-20 minutes until a toothpick inserted in the center comes out clean. Don't over bake, because they might be dry. After removing form the oven, let it cool down completely.

- For the glaze, whisk together the powdered sugar, lemon juice and lemon zest until smooth and combined.

- Drizzle the glaze over the top of the cake and spread it evenly with a knife or spatula (whatever works the best for you).

- Place the bars in the fridge for 1-2 hours. After that you can cut it into small squares and enjoy with a cup of tea or coffee! They can be served chilled or at room temperature.

P.S. I made a double glaze portion, because one portion seemed not enough for me and of course, I didn't have 20x20 cm pan, so I used a rectangular one, worked well, just lemon bars turned out lower.
