This weekend..

Winter came to Vilnius.
Now it feels like Christmas, which I love love love! Oh Santa Claus, I was very good this year!! :)
Ran some errands.
Baked the cake, which turned out just perfectly. After last week's  failure this cake was like a rehabilitation.
Met a friend and had a good time with great discussions.
And today I'm resting with tea, book and good music. Love lazy cozy Sundays.

As last week I didn't succeed in baking, so this weekend I was eager to make something great. I chose quiet easy recipe from Marry Berry's book "Complete cookbook". It is iced lime traybake. Easy to do, tasty and nice looking, just perfect. I am happy with the way it turned out. Let's try?
  • 175g soft butter or margarine, plus extra for greasing
  • 175g caster sugar
  • 250g self raising flour (I used regular flour)
  • 1 1/2 teaspoons baking powder
  • 3 eggs
  • 3 tablespoons milk
  • finely grated zest of 2 limes
Icing
  • 250g icing sugar
  • juice of 2 limes
  • as here where I live we don't have icing sugar, I used caster sugar + the white of the egg
Let's bake

Lightly grease the tin and line the bottom with baking parchment.
Combine all the cake ingredients in a large bowl and beat well for about 2 minutes, until smooth.
Turn into the prepared tin and level the surface. Bake in preheated oven at 180 C for 35- 40 minutes until the cake is well risen, springy to the touch and beginning to shrink away from the sides of the cake tin.
Leave to cool slightly in the tin, then turn out the wire rack, peel off the lining paper and cool.
Make the icing: mix sugar, the white and the lime juice well.
Pour over the cooled cake and leave to set, then cut into squares and serve.

 Bon Appetit!!!

Sushi Saturday

Uramaki -inside out roll with spawns, leaf of salad, cucumber, philadelphia cheese
So this Saturday I was asked begged by my sister to do sushi, because it's been a long time since I did it the last time. I thought why not. Once I was in the lesson of sushi making, which I really enjoyed and since then I love making them and I'm the master of sushi..in my family. Big statement :) So I made three types of them, with salmon, fish spawns and mixed salad. The result: everybody was happy, full and their taste was satisfied!
Makizushi - regular with salmon, cucumber, avocado, salad leaf, philadelphia cheese and a little bit of sesame

Actually I don't remember the name of this, but it goes with salmon, avocado, ginger, leek and mayo salad on tof of rises
Et Voila!

Sweet sweet super sweet

Brendo brendo ir pribrendo noras iškepti skanėstą. Taigi kažkurio sekmadienio popietę ėmiausi darbo. Varškės - sūrio pyrago receptą aptikau senesniame "Laimos" numeryje ir kuris laikas vis žvilgterėdavau į jį su mintimi: "greit greit aš tave iškepsiu, greit" :) Rezultatu aš buvau patenkinta, namiškiai suraitė beveik visą labai greitai, net ausys lingavo, o išvada: "gali kepti vėl" :) Labiausiai pasitikiu šeimos nuomone, nes visuomet pasako teisybę, kad ir kartais nelabai skanią :) Žalia šviesa duota, vadinasi, galiu įrašyti šį receptą į savo geriausiųjų knygą. Įspėju, kad saldu! Tad galima mažinti cukraus kiekį, o dideliems smaližiams bus pats tas :) Pabandom gaminti?

The desire to bake a treat was haunting me for a while. So on Sunday afternoon I got down to work. I found this curd - cheese cake's recipe in lithuanian magazine and I was looking at it with an idea: "soon soon I will bake you, soon" :) I was happy with the result, family ate almost all at once, and the conclusion was: "you can bake again" :) As a green light was given, now I can write this recipe into my the best recipes book. Warning - sweet! So you can put less sugar, but for likerish it's just perfect :)  Let's try to bake?

Tešla / Pastry:
  • 120g sviesto/butter
  • 100g cukraus/sugar
  • 2 tryniai/yolks
  • 1/2 arbat.š. kepimo miltelių/teaspoon of baking powder
  • 200g miltų/flour
  • 1 valgomasis šaukštas kakavos/spoon of cacao
  •  žiupsnelis druskos/a pinch of salt
 Įdaras / Filling:
  • 180g varškės/curd
  • 250g rikotos/ricotta
  • 180g maskarponės/mascarpone
  • 2 pakelių grietinėlės skonio pudingo/ packs of cream taste pudding
  • 200 ml kokosų pieno grietinėlės/coco milksour cream
  • 3 kiaušinių baltymai/the whites of the egg
  • 150g cukraus/sugar
  • žiupsnelis druskos/a pinch of salt
Kepam / Let's bake:
  • Grate cold butter and mix it with sugar, salt. Put flour, baking powder and stir everything well. Put the yellows of the egg and knead the the pastry. Lay baking paper in the baking form and put nicely the pastry. Now put the whole form into the fridge.
  • Mix the curd, mascarpone, ricotta, salt and sugar with the mixer. Put the yolks. Mix pudding with the coconut milksour cream (in this case I used regular coconut milk, because I couldn't find the cream, and also the next time I would put only one packet of pudding, because it was too much of it for my taste), add to the curd mass and  this to the well stirred proteins. Pour everything on the pastry and bake 160 °C for 1-1,20 h. Decorate with cocoa or icing sugar, or both.

    Bon appetit!

You're my river running high, run deep, run wild

Ramaus sekmadienio!

Simple, light and still summery...This kind of outfit I chose for a nice walk in the city. It's been two years while I'm enjoying my flea market finding - handbag. It attracted me very much, I had no clue why, because I usually don't like this kind of bags, but this one was so cute. And I noticed that every weekend I take it with me and it fits with every outfit just perfectly, although I have a considerable choice of handbags. This one is just so dear to me. As for the flea market, it's an amazing spot to find lovely things, unfortunately not every Sunday I make to it. I had a great succeess there last Sunday, a book about retriever, recycled notebook and of course I couldn't resist to these damselfly earings..ooch what a beauty..

Peaceful Sunday!

Sweet life with books

Na, o visos kitos knygos dar laukia savo eilės. Gal dar ką galit parekomenduoti?? :)

Here is a pile of  books lying lately on the corner of my table. And it continues increasing, meanwhile my reading is going very slowly, but still there is a temptation to buy a new book. So on Sunday I couldn't help myself and bought "Marley and me" in flea market. I saw my dream labrador and I just melt down. Yes, my arms drooped, the sound "ach" came out of my mouth like every time I face the lab. Well, it was only on a book cover, not a real dog, otherwise I would have looked at him with my wistful eyes and followed that golden beauty all twisted. Usually, I try to keep myself from the question: "could I touch him?", but it's very hard. Yes yes, let's come back to books. I told myself not to buy literature, only culinary and psychological books, but from time to time I can't refrain. Now I'm reading "The sweet life in Paris". How I wanted this book and so far I'm love with it. Paris Paris, croissants, macaroons, mmmm..good. The rest of the books are still waiting for their time. Any other books recomendations?? :)
