Chicken Fajitas with salsa and guacamole
EN   I must admit that I like mostly everything related to Mexican cuisine, so from time to time I tend to recreate something in my own kitchen to vary the weekly dishes. The last time I made this chicken fajitas. It's not only delicious, but also a fun way and I would also say a long and pleasant way to enjoy the summer dinner. It might look that this meal requires a lot of efforts, but honestly, it doesn't. It's easy and quick as one two three, if it makes sense, okay maybe except washing dishes part as this meal requires few bowls or more :))

LT  Turiu pripažinti, kad mėgstu beveik viską, kas susiję su meksikietiška virtuve, todėl karts nuo karto stengiuosi pagaminti kažką meksikietiško savo virtuvėje. Juk reikia įnešti šiokio tokio įdomumo į savaitinius patiekalus. Tad paskutinįjį kartą gaminau vištienos fajitas. Tai ne tik labai skanus patiekalas, tačiau ir labai smagus, bei sakyčiau ilgas ir malonus būdas pasimėgauti savo vakariene. Žiūrint į nuotraukas, gali pasirodyti, kad šios fajit'os paruošimas reikalauja daug jėgų, tačiau tiesą pasakius, tikrai ne. Tai lengva ir greita kaip viens du trys, na gal išskyrus indų plovimo dalį, nes čia reikalingos kelios, o gal ir šiek tiek daugeliau, lėkštės, dubenėliai ir t.t :))

Vištienos fajita

CHICKEN FAJITAS  from Jamie's Ministry of Food cookbook

1 red pepper
1 medium red onion
1 skinless chicken breast
1 teaspoon smoked paprika
1 small pinch of ground cumin
1/2 lime
olive oil
black pepper

- Put your pan on a high heat. Halve and deseed your pepper and cut it into thin strips. Peel, halve and finely slice onion. Slice chicken lengthways into long strips roughly the same size as your red pepper.

- Put the peppers, chicken and onion into a bowl with smokes paprika and cumin. Squeeze the juice of half a lime, drizzle over a lug of olive oil, season with a good punch of pepper and mix well. Let it marinates for 5 minutes.

- Then, put all the pieces into a preheated pan and cook until chicken is cooked.

* I served this chicken fajitas with sour cream, grated Cheddar cheese, guacamole, salsa, a little bowl of salad leafs and of course, flour tortillas. And of course, don't forget to warm up tortillas before serving! 

*It was a dinner for two and it turned out two tortilla rolls per person, we like to eat over here, so if you are preparing this for a bigger amount of people, make sure to double or triple portions ;))

Salsa sauce- salsa padažas
MID - SUMMER SALSA  from Thug Kitchen cookbook

2 cups tomatoes, chopped
1/2 white onion, chopped
2 garlic cloves
1 jalapeno, diced (I didn't have it, so I used cayenne pepper)
2 tablespoons lime juice (I used regular lemon)
1 tablespoon orange juice (optional, but I added)
1/4 cup chopped cilantro
1/2 teaspoon salt

Mix everything together in a bowl and chill at least 20 minutes before serving.

easy and delicious guacamole
GUACAMOLE  from my life experience :))

1 avocado
1 small white onion, chopped
1 tablespoon lemon juice
2 tablespoons cilantro, chopped
pinch of salt
pinch of black pepper
1/2 tomato, chopped

Peel and roughly mash avocado with a fork, leave it a little chunky! Add chopped onion and cilantro, lemon juice, salt, pepper. Taste, if you feel it needs something, adjust to your flavor. Before serving, add chopped tomatoes and if you want a bit more of chopped cilantro on top and you can dig in!
